Cooking time: 30 minutes.
Ingredients
- 1 tablespoon olive oil;
- 450 g chicken breast fillet;
- salt, ground black pepper - to taste;
- ¼ balsamic vinegar;
- 2 cloves of garlic;
- 450 g cherry tomatoes;
- 2 tablespoons fresh basil leaves;
- 4 slices of mozzarella.
Preparation
Heat oil in a large skillet over medium heat. Season the chicken with salt and pepper, fry on both sides until golden brown and place on a plate.
Add balsamic vinegar and minced garlic to the pan and sauté for 1 minute. Then add the tomatoes, salt them and simmer over low heat for 5-7 minutes. Stir in the basil.
Return the chicken to the pan with the tomatoes. Place mozzarella on top and cover until cheese melts.
