Scramble or scrambled eggs are prepared with the addition of vegetable and butter, it has a very delicate taste and pleasant texture. This breakfast is ideal for a keto diet.

I learned about scramble while on vacation abroad. This option for preparing eggs is very popular in Europe and America. If we usually do not add a lot of oil to our usual scrambled eggs, then to prepare the scramble there should be enough butter and vegetable oil.

If you are tired of scrambled eggs or regular scrambled eggs, then prepare a scramble. To add variety to the keto diet, I added aromatic smoked paprika and hard cheese to the eggs.

How to make a keto breakfast: scramble with cheese and paprika

Ingredients:

    How scramble tastes depends on the quality of the eggs. I buy farm or homemade eggs. They have a bright yolk, great flavor, and are always quite fresh.

    And if you don’t know how to check the freshness of an egg, I’ll tell you one life hack. You need to pour water into a glass and dip an egg into it; fresh eggs remain at the bottom or slightly lift one edge up. Eggs that have a shelf life of a couple of weeks will float to the middle of a glass of water. The missing eggs will float to the top. Therefore, if you are not sure about the quality of the eggs, place them in a glass of water before eating.

    To prepare scramble, you need a frying pan with a non-stick coating, preferably with a small diameter - 18-22 cm. This will make it convenient to fry the egg mixture. If you take a frying pan with a large diameter, the eggs will spread over the wide bottom of the pan. A thin layer of egg mixture may end up drier than the original scramble. You can also use a heavy-bottomed saucepan to prepare cheese and paprika scramble.

    I also want to clarify that it is better to use butter with 82.5% fat content.

    Grate hard cheese on a fine grater. Use the type of cheese that you like best. I used Parmesan.

    Beat all the raw eggs into a small bowl. If you are not sure about the quality of the eggs, then it is better to break each egg separately. So that the bad stuff doesn't get to the rest of the eggs.

    Heat a frying pan over low heat, pour in vegetable oil, then butter. Once the oil has dissolved and warmed up, you can move on to the next stage of cooking. The main thing is that the oil does not burn. The fire should be minimal.

    Pour raw eggs into the pan. The eggs must be stirred continuously until they “set.” The scramble should not stick to the pan. As soon as the eggs are no longer runny and raw, the scramble should be removed from the heat. But the egg mass should be very tender. Make it so that you can spread it on bread toast if necessary.

    Add salt and black pepper to taste to the scramble and mix gently.   It’s best to do this after removing the pan from the heat so as not to dry out the keto breakfast scramble.

    Pour smoked or regular paprika into the scramble, you can sprinkle it on top or mix it with the egg mixture.

    Place the scramble on a plate and sprinkle with grated cheese on top. The portion of cheese can be reduced or increased, it all depends on your appetite.

    Serve keto scramble with cheese and paprika for breakfast hot while the eggs are warm and tender. To this breakfast you can add a few pieces of avocado (about 50 grams) or a couple of pieces of bacon or ham.
